Great knowledge. I will like to add something about coffee house demographics. When looking for information on a specific area, the Department of Economic Security has all the pertinent information on a census track or zip code. Sometimes as detailed as: house occupancy, ethnicity, income level, house value etc. It's funny that we use Starbucks as a bench comparison. There is nothing wrong about that. They have done amazing things for the coffee industry. I just read an article about there concern on the image of the corporation. Howard Schultz is concerned about it's Ennui. I guess they are getting bored with there lack of innovations. I like the article because described the true nature of there business and that is not coffee alone. We have to know that when we open a coffee house. Having the best product alone will not make us be successful if our costumers do not recognize the taste of that product. The full article can be read at seattlepi.com and Bill Virgin wrote it. Great article Mr. Taylor.
